Sock It to Me Pound Cake

Ingredients

For the Cake:

1 box (15.25 oz) yellow cake mix

1 cup sour cream

4 large eggs

1/2 cup granulated sugar

1/2 cup vegetable oil

1/4 cup water

1 tbsp vanilla extract

For the Filling:

1/2 cup chopped pecans

2 tbsp brown sugar

2 tsp ground cinnamon

For the Glaze:

1 cup powdered sugar

2–3 tbsp milk

1/2 tsp vanilla extract

Instructions

Make the Cake Batter:

Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan or a round cake pan.

In a large bowl, combine the cake mix, sour cream, eggs, sugar, oil, water, and vanilla extract. Beat on medium speed until smooth and well combined.

Prepare the Filling:

In a small bowl, mix the chopped pecans, brown sugar, and cinnamon.

Layer the Cake:

Pour half the cake batter into the prepared pan.

Sprinkle the filling evenly over the batter layer.

Top with the remaining cake batter, spreading it gently to cover the filling.

Bake:

Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10–15 minutes, then carefully transfer to a wire rack to cool completely.

Make the Glaze:

In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.

Drizzle the glaze over the cooled cake.

This Sock It to Me Pound Cake is moist, flavorful, and layered with a delicious cinnamon-pecan filling. A crowd-pleaser for any occasion! Enjoy!
